Yummy Coconut Cream Pie that makes it's own crust!

This is one of Doris and Bill's favorite recipes. Doris recommended not making it if you don't have help eating it, as you will want to eat the whole thing! This recipe came from Barb J, a family friend.

Coconut Cream Pie
4 eggs
1 cup sugar
1/2 cup flour
1/4 cup melted butter
2 cups milk
1 1/2 cups coconut
1 tsp. vanilla
Combine ingredients in order given, pour into greased, deep, 10 inch pie plate.
Bake at 350F for 45 min. or until golden brown. Middle will appear soft, it will have a delicate crust over top, sides, and bottom.

    Doris is right. A person could eat the whole thing by themselves, but be careful of the consequences.

    So why was this never served at a Lauritzen family get together. I don't recall having it in the 35+ years I have been a Lauritzen.

    It sure is good!!!

    Anne,
    This is a great new recipe that is "new in the family". We'll try to have a big family get together this summer at the farm, and Doris will be responsible for bringing this new "family traditional pie".
